A type of smoke sausage used mostly as a seasoning meat for gumbo, jambalaya, red beans and many other dishes. We use choice lean pork which is coarse ground, seasoned with salt, red and black pepper, garlic and Worcestershire sauce. It is then stuffed into a large casing about the diameter of a golf ball.
